You can 'missuse' the verification functionality (which actually is what HiddenPath suggested, unsubscribing does not uninstall anything on it's own), but this only helps with files belonging to the original game installation. Additional files (and AoE is meant to be modded by adding new files in most cases) have to be deleted manually.
In case of soundtracks this means you have to open the AoE\sound\music folder and delete every file with a number higher than 20 before verifying your game cache.
The only solution to avoid this for now is to use my mod manager. Mods that have been installed using it, can be uninstalled with just one click. :)
