Redeads and Stalfos will occasionally (rarely) appear where Draugr and skeletons do.

Redeads have a distinctive paralyzing scream shout that is unavoidable and will paralyze you for a few seconds.
And no, you ca'n't learn it. You already have Ice Form.
They appear in Draugr lists starting at level 13.
They are also faster than Redeads you may be familiar with, and will loot chests and corpses for weapons. Their strikes absorb health.
They do NOT jump on your back and bite your neck like classic Redeads. That would be impossible to make in Skyrim.

Stalfos are giant skeletons that wield steel swords. They are much tougher than normal skeletons.

The two undead will drop Redead Skin and Stalfos Bone Meal, which are alchemy ingredients. They also have a rare chance of dropping a Summon or Thrall spell tome. 10% for the Summoning tome and 5% for the Thrall tome.
The Redeads have a 55% chance of carrying a Burial Mask, the masks they wear.

Oh, and here's a hint for dealing with Redeads:
Stun them before they stun you. Or sneak up on them.

June 30th, 2014 - Redeads and Stalfos are a little less rare now.
February 28th 2014 - Redead Masks now fully wearable and less rare than in previous versions.
