To set season speed: Find FasterSeasons.lua in the path "\steamapps\workshop\content\108600\2063439157\mods\SeasonalFarming\media\lua\server"
You will need notepad++ to edit lua files easily, try setting
FasterSeasons.speedMultiplier = 1
This is for singleplayer mind you, and essentially makes a custom version of this mod. I would create a settings addon for this if I knew how, because this is a really cool mod, but this is what I did in the mean time. I hope this helps someone.
I would also agree that it is unfortunate and a bit immersion-breaking that eating a potato raw would cause that.
That said, it is actually possible to become poisoned from eating a potato. Specifically, if a potato happens to poke out of the ground as it grows or otherwise gets exposed to sunlight for long periods of time, it can turn green. If it turns green, that's a sign that it contains toxins and can poison you. Obviously, though, that's rare and should be easy to avoid.
