So when you are in an area where there are a few vegetable, fruit and nut plants, but not many of each, they will waste time with empty trips, gathering only a couple of one thing, instead of filling their basket with other available stuff. Sadly this is a mechanic I can't change. What you can try is to build your gathering hut somewhere else (low terrain is best, where vegetable plants are predominant), or if it doesn't work for you, deactivate gathering and boost farming. Sorry I don't have a better idea :-/
I didn't really know how nutrition values worked, but better to have a maximum of info ^^
Berries have 4,5 calories and vitamins B,C and D,
nuts have 9.0 calories and vitamins B and E,
greens have 4.0 calories and vitamins A, B, and C.
Stew (no matter from which recipe) has 14 calories and vitamins A, B, and D,
porridge (no matter from which recipe) has 10.5 calories and vitamins A,B, and E.
The vitamins however are not a value that is really very important for the villagers' health. If you see villagers with scurvy, that is caused by a general malnutrition (when a villager's calories fall under a certain threshold) and a lack of available herbs to cure it.
However vitamins play a role in the villagers' eating preferences, which is how I balanced my mod food ressources (apart from realism)

Where can I found the nutritional value (vitamine A,B,C,D) of the nuts, greens and berries and of the recipies of kitchen & cooking ? (I know nothing about modding, so I don't know where to look ^^')
