fair enough, before I tried standard mobile GNU/Linux, I used LineageOS, and before than it's predecessor project CyanogenMod. Ran it on almost every device I've ever owned, from the Samsung Galaxy Nexus up to the Google Pixel 2 XL.

It's mighty fine as far as Android is concerned.

As far as music players go, Debian comes by default with Lollypop which I find to be servicable. If you want another one to try, Gapless is also another good option.

Completely disabling bluetooth may cause some problems with dependencies, but you could also disable the service which provides the functionality (using "sudo systemctl disable --now bluetooth.service" than verify using "systemctl status bluetooth.service")

I use GNOME's default video player, you should probably get it on flathub (https://flathub.org/en-GB/apps/org.gnome.Showtime)

the installation process is similar to any other custom ROM, so if you've done that before it should be pretty straightforward. Not certain about that carrier though, it would be a good idea to enable VoLTE before installing Mobian though.
