It's not very plausible that someone is going to go through your trash reassemble your gift cards back together and figure out which MIGHT be part of the evidence required to prove ownership of your account. For one they'd have to know which account the used cards go to, they can't just take a used giftcard to Steam support and find out which account the card was used on.
Keep them because sometimes you need them to prove what you bought on steam. If you ever lose your account, you can use them as evidence to prove the account is yours.
BTW, i did see someone go thru my trash before. That is why we shred all our documents and throw pet waste on top of them now to prevent it from happening again.
Just to let you know, we did report this person going thru our trash, but the police does nothing. Just like when i caught a person posing at me at this place. I even had it filmed too, and they still refused to look at it.
