There's nothing unrealistic about it, this particular selection of people happen to be bisexual.
Also, it's not true; the romancable companions are bi, Jaheira is straight, Minsc is almost certainly asexual.
No, they are absolutely not believable. It was actually bad enough that this caused an entire war on this forum. That was until the people calling out the companions being too eager were vindicated when the devs admitted the problem and they had to patch the issue, twice.
People still to this day try to say they were never thirsty, even though the devs have confirmed as much.
