As for the location, I think it would be interesting to have a map in China centered around the Great Wall. There would certainly be some lore to play with there. E.g. did the breakout occur within the Great Wall in one of the major Chinese cities or did it occur outside of the wall and zombies got in somehow? I can also imagine that there would be a bunch of small camps set up along the Great Wall as people try to get over to the other side, whether that be trying to get into the safety of the wall or get out of the danger that the wall keeps in.
Edit: Another idea, playing off of 88botong's "huge city" idea would be to center it around New York City and specifically Manhattan Island. I can imagine that the bridges to the island, maybe all but one, would be destroyed.
I can't think of anything to suggest other than just do things similar to how you did Deepwood. i.e. a healthy number of deadzones, easter eggs, underground areas, areas that require generators to enter, etc.
One last thing. I'm excited to see what new maps you are coming out with.
