What does sending a dino to the professor do?

It's a means of permanently getting rid of a dino you may not want anymore.

I kinda figured that :) I tried it with a modded Dino and nothing happened. So either it was cause I had a modded dino or it didn't work for me :(

It should just work, regardless of dino. Are you on a Server, Single Player, or Hosted Single Player?

Server, the modded dino was from Mythical Creatures, one of them double headed goobers.

Did the UI show up, message successful show up, but nothing actually happened? Or was it that the UI never showed up to allow you? It's a confirmation modal. It only works after you click "Accept" on it.

I never saw a second UI, beyond the button to send him to the professor. Let me log in and give it another shot.
