How about some more mined minerals: Tin, Titanium, Nickel and Potassium. Other possibilities are Peat from a farm on Marsh with Peat. Potatoes from a farm on plains or grassland with Potatoes. Other farmed thoughts are Olives (plantation on forest), Dates (plantation on desert) and Corn (Farm on plains or grassland). Sea resources could be Lobsters (fishing boat on ocean), Seaweed (fishing boat on coast) and Turtles (fishing boat on ocean or coast). You could have Seals (Camp on snow), Beavers (Camp on forest next to river) and Crocodiles (Camp on flood plains or marsh next to river). How about some late game resources like Helium, Composites, Rubber (plantation in jungle), Plastics and Pharmecuticals. Some good late game luxuries could be Liquor, Gaming Consoles, Blockbuster Movies, Pop Songs, TV Shows, Cell Phones and Software Apps. Many of these would require buildings or wonders to produce.

My favorites are Rubber, Corn, Titanium and Olives.

Maybe Thorium as a strategic resource, adding to your uranium count but having a mine that gives more scince and gold than produciton.

Maybe add another version or supplementary mod with mythical and fictional resources such as adamantium or mythrill.

There's really practically infinite possibilities here. That being said, I think that some of the biggest missing resources from Civ 6 vanilla are maize, rubber, and coral.

I also agree, Natural Gas would be great for mid-late game. Maybe something like Carbon too - Yes, carbon is in everything but you could make it a bonifide resource for late game and a necessity for advanced military units, same for Tungsten

I'd like to see current existing recources fleshed out i.e: instead of "citrus" it would be oranges, lemons etc.or perhaps more livestock like chickens, and maybe something to diversify lake tiles like trout and other freshwater fish, and for that matter, any kind of seafood to replace "fish": Tuna, Halibut, Shrimp and Prawns, or even exotic stuff like Shark, or Marlin/Swordfish which could be luxuries in addition to Caviar (which is typically the Roe of Sturgeon or Salmon depending on where you're from) and as Shainze mentioned; Lobster.

I was also thinking of more biome-specific things as well like: Jaguar/Tiger skins and (as others have mentioned) Rubber for Jungle, Polar Bear/Arctic Fox skins for Tundra and/or Snow, Palm Oil in Deserts and jungles etc.

Minerals & Minables: Natrual Gas, Thorium Tungsten, Amber (as others have suggested) more precious stones: Emeralds, Opals, Sapphires, Topaz etc. and Tuff; an important building material of ancient times, it was used Everywhere from Rome to Armenia and even the Easter Island Heads were made of it.Other historically significant Rocks and Minerals: Sandstone, Agate, Obsidian, Flint, Diorite (Hammurabi's Laws were carved on Diorite)

And finally, Crops: Corn (or Maize),Beans, Tomatos, Potatos, Cucumber, Melons, Gourds, Soybeans, Carrots, Onions , Turnips, Cucumber, Peppers (Black, Red, Chili,Bell etc.). Fruits: Apples, Peaches , Avacodos,Pears, Strawberries, Pineapple,Cherries,Mango,Figs,Pomegranates Lemons, Limes, Oranges. Berries and other stuff: Cran, Blue, Black, Rasp etc. and not to forget Dates (also mentioned by Shainze), Various types of roots, herbs, Spices: Mint, Ginger, Saffron, Sassafrass (for Root Beer) and while we are on the topic of beer, we will need Hops. Nuts: Chest, Wall, Almonds. and to conclude, how about Hemp and Coca, both were used for both "Recreational" and practical purposes,example: Hemp was commonly used to make Rope and Clothing and Coca is used in the food industry; cookies, granola bars, candy and of course Coca- Cola (all decocainized of course):steamhappy:
