I can't find in the advanced setting how to take out a portion of the map

It's called "map section", assuming you're using the Giant Earth or Largest Earth.

Can i only do it for giant earth and largest earth? because those two, for me, it says they are unstable in late game. is there anything i can do to still be able to play them without crashing? if not, can i still do it on greatest earth map?

the mod will tell you if the section choosen is too big or not.

i am sorry i meant Greatest earth map. since this is the only one of the three my pc can handle

any PC should handle the Giant Earth when you'll remove a large enough portion of the map with the section selection, as explained in description and the tooltip in game.
