How does adding Ammo work for the V1 and V2?
Is it possible to add additional ammo to the V1 and V2 Launch Systems Inventories? I tried every single vehicle and it wouldn't let me add ammo to their inventories either. Are the Launchers for the V1 and V2 just a one time use kind of thing?

It's one-off.

If you want to add ammo, open v1.DEF (Notepad open),Replace the original {extender parameter "inventory", that sentence, not lack of symbols.

{Box
{size 12 8}
{item "ammo rocket_v1" 5}
