The arena fights are untouched by Extinction Core, the modded wild spawning bosses are way stronger. So it's possible to win the arenas solo with a breeded, leveled mid to high lvl Alpha wolf, but you will never survive a modded boss outside the arena with it xD

What's the benefit or purpose of the arena fights in EC, just out of curiosity? The bosses don't drop Essence or anything, so is it just for bragging rights, achievements, loot, Tekgrams and levels, or does EC add a special reward/bonus/incentive for fighting the bosses?

You don't need to fight the arena bosses at current mod version if i remember right. Some time before you had to beat them for trophys to craft the primordial's tributes, as there was no trophy pack at the deitie's loot. But unlocking standard tek engrams might sometimes be helpful, especially when playing solo. A tek chestpiece is great to fly above bosses like dodorex' , lure them into the water and tranq them.
