Saddle taming only works on the six bosses, dragon, manticore, dodorex, dodowyvern, broodmother and megapithecus. Alphas need their specific kibble, some can be passive tamed by wearing alphea helmets and reaching the needed player lvl. Look at the creature guide for taming information. It's not completely up to date, but helps a lot.
