This is how i removed it (Im using Google translator, so... my apologies if something's different):

Go to Skyrim, Manage, Browse local files, Data.

Once in the Data folder, delete every file related with SkyIU, i deleted this ones:

- previewfile_8122.jpg
- SkyUI.bsa
- SkyUI.esp

Then start the game normally, it should be fixed.

inside the Skyrim Launcher open "DATA FILES" and select SkyUI and on the bottom left there is the uninstall button which should delete it.
