When I researched the medieval stuff I spent way to long wondering where my quarry was, and I realized that I did a silly thing with a tribal start where I put off researching stonecutting because there was plenty of stuff on the map to deconstruct for stone blocks. I never realized it was a requirement, because I usually do stonecutting right away, so double check that you have the research.
