Player Catcoons are not really able to catch birds.
I can see NPC Catcoons hunting birds. But when a player does the same they fly off.
Guessing this is due to Npcs still being player character aware, or something along those lines.

birds don't naturally fly away from catcoons, when a catcoon does a pounce attack on a bird it runs a rng check on whether or not the bird should flyaway. Birds are naturally afraid of players due to the default "scarytoprey" tag so they always fly off when a player is nearby.
