They are not supposed to move or follow you. You'd need to make a completely new model, animations, AI, everything to make them actually move around, I dont even think thats possible with the modding tools. The same goes for any other animal in this mod.
First of all, different dog breeds can do different things.

See this chart. Hunting Dogs help you with hunting (duh), though I havent actually used them, So I dont know exactly what they do, same goes for Herding dogs.

War Dogs can be used for fighting, but they need a harness which you can put on them. After that you equip them as a weapon, and they kind of do damage from a range whenever you swing.

Pack dogs you can equip with saddlebags, and they are an extra container for you to use.

And no, they do not need water and/or food. They cannot starve and cannot die.

So what your saying is that we swing around dogs since there is no animation or AI available for objects ;-) PETA wants a word with you... lol

theres also some dog food items, like kibble, and biscuits and a bowl that you can use to get other items, which have more uses too.

On another note I'd love to use dogs but it's a bit overwhelming.

there was a very cool image about hydrocraft dogs, with 3 circles (all slightly overlapping)
and inside the overlaps, it broke the categories down into more details.
i saved it somewhere but forgot where :)
