What are enemt standards?
I captured an enemy vassal and told him I captured an enemy standard but he denied me, I have no idea what are enemy standards

A standard is a flag.

How do I capture his flag? I hit a flag bearer with a non-fatal weapon?

It doesn't matter as long as he's out of combat, you can kill him. But you have to manually pick the flag off the battlefield and make sure you have it in your hand when the battle ends. Then it will be added to your inventory and you can take it to the officer
