Can you release a vassal after acquiring territory?
I conquered some territory but it was splintered across multiply nations (large war). After a few decaedes I pieced together a region in iraq. However, I just realized (hadn't dawn on me) there is no option to release a nation as a vassal.

It has been a while since I played vanilla but I do remember that being an option.

Or is this completely removed from VeF?

It's there, go to the Diplomacy view and view your own nation. Have the opinions tab open on the right side of the window (not the points of interest if you have that DLC) and there's a button at the bottom of the window with a green flag that lets you release nations as vassals (though not when at war).
