Tyranitar I find often has the tendency to either destroy their opponents or getting sent off stage a lot to get edge guarded. I just don't think rushing in with this character is a good strategy (though the new up special variant can be nice for mind games), which is why I prefer using his pokes (forward tilt, jab, and maybe up tilt).
As for why not something like Stealth Rock, I find his SR boosted moves are a bit risky sense the projectiles can be parry food. Stealth Rock in my opinion is at its best is when Tyranitar has the advantage, having good space to set up rocks to fire off those boosted side specials or forward strongs.
After getting in advantage, his long reach can put in some great work. Whether its forward tilt, forward air, back air, up air, or hyper beam, Tyranitar edge guarding is what gets most of my stocks. Beware of how much you throw out however, as these moves (minus up air) are very liable to getting parried.
