Regarding default, I would recommend keyboard players use these settings as a baseline and adjust from there, steering feels closer to vanilla.

Steering sensitivity at low speed: 0.55
Steering sensitivity at high speed: 0.15
Steering centering at low speed: 1.25
Steering centering at high speed: 0.55
Steering Snapback: 5.00
Steering high speed: 50.00

I just tested with a standard vehicle the one I have used this whole run and feel familiar with, took it around the block and on the highway so results may vary for sports or modded vehicles but these settings keep the vehicle feeling weighty and easily driveable.
