How do I activate this?
Subscribed to Mod but nothing in game to let me load the mod nor are there any instructions here.

It applies automatically. After you subscribe to it you need to play and save your game the mod then updates with your game and applies the next time you start the game.

It doesn't tho, my Pebbles is still vanilla.

It does, hopefully you see it soon. I subscribed to the mod and played the game expecting to see it. It didn't appear then I stopped playing and the next day there was a download for KCD2 that was not connected to the Mod Patch I wondered what this was and could only assume it was the Mod downloading as when I got into game my Pebbles was a Zebra.

No it's Pebbles that is a Zebra it tells you on the name of the Mod

I know but it doesn't work for me on either horse
