That was pretty much my idea

Spooky nighttime Alderney Sprunk Factory from GTA4 with a decently sized sewer system in the basement just like the game
Easter Eggs could be immobile alligator in stormdrain (GTA4 alligator sewer hoax) and some type of Ratman reference (Ratman became a GTA4 hoax as well ig)

I think a map based on the countryside/wooded areas of GTA SA would be cool. Like Shady Creek/Back o' Beyond, maybe even Mount Chiliad.

Have you considered combining the smaller maps together into a larger Los Santos map? Even if it isn't the full city just a portion of it would be fun to explore instead of these individual maps, Your recreations are incredible and are just a certain quality that I wish more gmod maps had.
