One of the reasons for swapping with Remir is that she's optional. it's not encouraged but you can turn her away and it's not assumed that she's there. Zavarde is different and I wouldn't recommend it.
The two retainers are not techincally optional but unlike Zavarde they're never required, so you could replace one of them at your own risk, if you type these two lines in the console next to the crub it will remain where it stands, the retainers are called player2 and player3
