They spawn randomly on a 10 - 15 minute interval.
You can hide for them and they'll just circle around the area or rarely leave.
To get rid of them you can go to the options of the mod and disable helicopters
To defeat them you can use any high caliber weapon to shoot at the rotors of the helicopter, an RPG is recommended as a single hit to the front of the helicopter will shoot it down.

Use cover to survive for longer.
