It does make for a good experience - at least according to the feedback we have received so far.
Re ammo, the option does say "You will also get the corresponding faction technology once the faction researches it.", so you will gain access to it as soon as the faction does.
Yes, it is intended that the Buffed option just adds the specialist to the team without replacing anyone. To put it simply, the special faction start with an unbuffed squad is there as an extra challenge for the experienced player to shake up the meta, while the buffed squad + special faction start is an extra easy setting.
My current run is an Anu+Unbuffed start. The Priest started with Mind Control unlocked as his secondary weapon but came with History of Violence. I cheated and gave him the promo Berserker helmet to bring his WP back to 6.
I ordered a Scarab on day 1. But it wasn’t strictly necessary because in this run I was lucky with early recruitment options (day 2: Anu Assault, day 3: Anu Berserker, haven event on day 4: Anu Assault w/NJ gear). Nevertheless since day 5 may A-team is: Scarab, Assault/Heavy, Priest with AR Proficiency, Assault with HW Proficiency. They shred things :-) . Since day 11 the B-team (recovered Scarab, Sniper, Assault, Berserker) is active, too.
I entered mid game with the evolution report on day 17. My status then was:
Diplomacy: Anu 35, NJ 6, Synedrion 34
5 bases, 5 Fabrication Plants, 4 Research Labs (+6 being built +Synedrion’s 50% research bonus), 11 soldiers, 3 Scarabs, 4 Manticores (+1 Helios being built), 4 Training Facilities
30 research projects done, 3/4 of all faction havens visible and 1/2 of about 80 other sites explored.
Feedback on starting ammo:
Anu Priest Class was shared on day 14. I was then down to 2 Redeemer magazines but the Priest had used his AR often.
Question:
Is Melee a direct or indirect attack?
I ask because Biochemist applies to Neurazer strikes.
VO "All diplomatic penalties and rewards halved" does not reduce Pandoran flyer interception diplo rewards.

Legend, Anu, Unbuffed, with promo skins, v1.0.1.6 - v1.0.1.7
Manufacturing order: Scarab, Manticore, FAR-M, …
Feb 14: I’m about to do the Phoenix ending (remaining time for Yuggothian Receptacle is 5h. (I only got NJ to Allied just now because a VO on Feb 1 slowed down my diplomatic progress.) I’m swimming in resources.
Legend, NJ, Unbuffed, without promo skins, v1.0.1.7
Manufacturing order: Manticore, Scarab, Manticore, …
Jan 27: I played bad exploration wise. Due to a lack of resources I only have 6 Research Labs (+50% bonus). But a VO (2x research output) came to the rescue. Anu are Allied and the remaining research time for Temple of Eanna is 22h. I’ve put Mutoid Genetics (8h) to the top because my SP pool points are few. The idea is to bring a Scarab and an Infiltrator Mutoid as support (provides control of Spider Drones, Launch Goo Bombs to deny the Pandorans access to the tunnel in the wall and Launch Fireworms to place fire in tactical positions). Then I’m down to 5 serious soldiers. That should be enough. The Anu ending will surely slip into February.
Legend, Synedrion, Unbuffed, without promo skins, v1.0.2.0 - v1.0.2.1
Manufacturing order: Manticore, Manticore, FAR-M, …
Feb 3: I’m already bored waiting for a haven defense against a Scylla. Yuggothian Entity is done. But I’m about to get NJ and Synedrion to Allied the next day. With 14 Research Facilities (+50% bonus and since Feb 2 2x research output VO, too) their critical research will be done very fast.

Early game manufacturing order and soldier count:
It’s RNG if there are faction soldiers recruitable in the first week. With only 3 soldiers ambushes are difficult and scavenging missions not practicable. Scarab first is viable. In the last game there were so many NJ Heavies recruitable (IMHO the best solo explorer, at least in the first 3 weeks): 2 Manticores first were the strongest option.
Elite classes:
Comments about Priest: Mind Control opportunities have to be arranged. I think I’ve never before used MC so much. History of Violence or Volunteered as first background perk is devastating. Anu Priest Class was shared on day 14.
Comments about Technician: the turret is squishy. The Technician has to stay nearby if deployed to be able to pick it up quickly. Bad for missions were mobility is king. The Mech Arms and later Remote Control allow for very aggressive vehicle play. Technician Development was shared on day 17.
Comments about Infiltrator: IMHO the strongest start because Spider Drones are a force multiplier, mobile scouts, cheap decoys and can render many early game enemies a non-threat. Guaranteed first day contact with Synderion gives much needed tech resource. Infiltrator Class was shared on day 7.
Class combo:
Infiltrator +Priest is interesting because Saboteur reduces the AP cost of Mind Crush to 0. Against vivisected Pandorans that’s 110 dmg/0 AP and 6 WP. Sneak Attack doesn’t apply. Hidden status isn’t lost. Synedrion start allows for collecting many SPs: 18 WP (= 3 Mind Crushs) is feasible, then. If enough enemies are killed even more Mind Crushs are possible. Kills can be prepared with Crossbow shots.
