Short version: remove the file Options.jopt in your saves folder, that takes care of everything, no need to uninstall the game, etc.
Long version: we create 2 new difficulties and if you start a new game with TFTV something related to the chosen difficulty (not sure what it is; maybe default option?) is saved to the Options.jopt file. This file is read on gamestart. Once you uninstall the mod, the Options.jopt file points the game to these difficulties that do not exist in Vanilla, so it bugs out.
TLDR that's all there is to it, remove the Option.jopt in your saves folder.
As a sidenote: if you subscribe to a mod, especially in beta, you should expect bugs. It happens; you are warned by the game devs on hitting "Mods" tab and by us in the Mod description. We are very active in fixing them; I stop by the forum less often (2-3 times a day), but I'm always on Discord.
