Sadly there is no way that I know to do that in the current state of the game. Zombies can only appear on maps played in Zombie mode (so far only the GoatZ map use this mode). And I don't know any way to change the game mode after the game actually started :/

@Geneosis I Know how to change it to zombie mode type: 'open level_01?game=GoatZombieContent.GGGameInfoZombieContent' in the console [If you are in goatville]
