I didnt take a look at apiary because the ingame manual is in spanish. Also I dont know what "honey sheets" are.

BUT:
You can hunt with slingshot + small stones + binoculars by right clicking on a BIG (<-Important!) tree.
Beside small animals and bird nests there are sometimes also bee hives.
And if I remember right you can gather honey or something like that from these bee hives.

Maybe thats what turin wanted to say.

i cant find honey sheets either and ive collected and examined like 30 beehives

HI, you have to find Beehives and "cut" them with a knive to get the sheets.
But to produce Honey you have to find a Queen Bee and place it into the apairy. But i didn´t figure out how yet, because i have not the Option to place the Queen. Have a full Bee-Suit on, a Queen, but i can´t place it...only the option "Add Queen to apairy" no Underoption to choose the Qeen
