The lack of checkbox was a red herring - the real issue was that AdventureMode didn't show up in the New Game menu.
Problem was that the mod folder didn't have the same name as the mod - it was a bunch of numbers instead, maybe due to how it was downloaded. Just had to change the name of the folder for this mod to "AdventureMode" and that did it.
