I'm also having this issue

The temporary fix I found is using /grantadmin <your username> will give you access to the same kind of sandbox options in an Admin menu, but they won't be jumbled, at least they weren't for me. Leaving/shutting the server down and rejoining should apply your changes and remove the admin commands.

I've found a workaround to this, but it's slightly cumbersome. If you go into the sandbox options for a new game, you can adjust settings there in an unjumbled screen, and then save that preset. When you're in your game, you can then apply that preset to your active game, adjusting settings that you can't see.

Just be sure to go through all of the settings to make sure that they match your current game, or preferably load that saved preset when you're adjusting them in the new game sandbox options. Then just save it again, go ingame, and apply the newly saved preset.
