Because the original creator of the gun animations (well, most of them), Minh Lee, is left-handed. Same reason why the original Counter Strike had the same quirk.

He's still alive. The animations were ported from his 2013 FPS title called Tactical Intervention; as per the description of the addon. It was ill-fated though, because it apparently had an excessive amount of microtransactions. I wouldn't know, I never played it. And it's kind of impossible to access now.
