for the Ashes to Ashes Objective , what Items are considered? I know it says Holy/Unholy , but what're some of the definitive items? I know some of those items under those categories appear in different pools, so do those count?

Only the items that count towards Seraphim/Leviathan.

Okay, i already completed both Jobs, so here's my experience and what i have to say.
I really like gameplay desings of both Job and Tainted Job, they are feel like they could belong in base game, and they are really fun in their own way.
Job feels pretty balanced for the most part, his tears mechanic makes him really fun to play, and the book for the most part is pretty good. Only thing i would change about base Job is to take his soul heart, cause he's already really good enough.
Tainted Job tho, he's straitgh up busted.
Most of his runs are ez wins if you don't lose good items , or they're pain cause you lost op items on the next floor cause you coudn't use deus custodia on it. It's just not fun losing good items.
Item wise, some are interesting and some are just plain dumb op.
Job's flesh, even with drawbacks is just so damn good. 4 Incubus just for 4 broken hearts lmao.
This mod need some tuning and it can easly be one of the best mods out here.

I however would like to hear more about any balance tweaks you might have in mind. Job's Leper Flesh for example is pretty busted but it's also a Secret Room item with 12 charges, so one could argue that balances it out? I'm not quite sure, as I said I would welcome any suggestions.

Well, i have few suggestions for balance in mind,
Coming back to Job's Leper Flesh.
In good situation, it's very strong and game winning item, even tho it's super rare due to beinng in secret room pool.
Honestly, drawback is pretty big if you don't have confessional unlocked or you can't find it.
If i wanted to nerf it, then i would simply not allow confessionals to spawn, when having Job's Flesh, otherwise i think it's in a good spot, don't need to be nerfed.
Job's Rags is kinda neat idea, but honestly it's pretty meh in use, and most of the time i lose tears up before boss fight in later parts of the run. In early game, it's very good, but the bigger floor is, the worse this item is.
If i wanted to buff this item to:
- Increase duration and reduce tear boost.
- Make killing mobs increase tear boost time slightly, not a lot, but just to make a little diffrence.
I need to think more about the rest of the items, cause i don't want to give you half assed opinion.
But for now, i'm i can only think of those things as problematic.

Job's Rags is supposed to be a neat boost when you begin a floor, not a tears up, so I don't think it's really fair pointing out that you can't reach the boss with the buff as a drawback of the item. Regardless, you may wanna try Tainted Job's Rags in this case, that one might feel better for you.

Can you do encyclopedia entries for the B-side content? Like B-side Job,B-side Tainted Job,& their unlocks?

There already are, literally read the information tab in the extras menu and it tells you right then and there.

I just completed the second post-it but I cant open the extras tab on the encyclopedia. Is there something else missing?

You're probably having the same issue as everyone else, despite having an incomplete post-it. If you look into your completions you'll see that at the top left there is a missing post-it, it stands for the character's challenge.
