You can leave "steel" as steel, instead of "iron" and for Medieval Overhaul's steel recipes you can use "improved/refined steel".

It sounds cool as iron to steel refinement however there are lots of mods it would be even cooler to be able to play MO with other mods without any compatibility issues.
