Start a Workshop game (New Game --> Workshop), then under the Mods tab, drag Ludicrous Gibs over to the right. Then hit Start :B1:

So using this or any workshop item would disable achievements? Do I need to quit the game to re-enable them?

Not at all, because I ->think<- Workshop only works on Windows.

Mac is not a handy tool for old games.
