You're going to have to forgive my poor explanation since my gmod keeps crashing so I can't give a tutorial, or word for word, but...
I went to singleplayer used a npc spawner (Whether it is a mod or not is beyond me) and looked for the thing I wanted to use in the background npcs, then next to it's name is it's npc name that the game uses in code stuff. So for instance the VJ base MW2 Juggernaught I wanted had an npc name of something like npc_vj_mwjuggernaut_original , I then put that as his class in sh_npcs.lua.
For models the only way I could figure out how to find out their folder pathing was by extracting their workshop addons.
You can find you addons in \Steam\steamapps\common\GarrysMod\garrysmod\addons
If the one you are looking for doesn't show up it'll be located in:
Steam\steamapps\workshop\content\4000
For an extractor I use gmpublisher.
I could also walk you through modifying the star count to 8 (Which is the max for whatever reason), or replacing the star image if need be, though those are a lot easier to do you really just need to know where they are located..
