Removing color sliders
For removing color sliders:

Open folder Steam\steamapps\workshop\content\233860\2422691424\editor\
Open .xml files with any text editor (Notepad++ is good)
Remove all lines from <ColourRange name="Skin Tone"> block except two first and one last lines.

So it will look like this:

<ColourRange name="Skin Tone">
<Colour r="255" g="255" b="255" />
</ColourRange>

Is there a way to get rid of all the colour variants of NPCs? would like to keep it to the defaults only.

I've done that, it doesnt work.

If you met an NPC before you turned off the sliders, it will be saved in its data in your save file.
Only import will help.
