Here is an option for your .ini file. Just copy and paste this into the file.

[xLSStacksHigh]
EnableMeatInterval=False

Set it to true, to activate the default Interval, when using meat.

Any way to add an option to have vanilla weight still while allowing the bigger stacks?

Also I don't see a GameUserSetings.ini in the mod folder.

There is no way changing weights as i havnt implemented this feature.

And you will find the GameUserSettings.ini in the ARK Server folder.

ShooterGame/Saved/Config/WindowsNoEditor/
