You can either use "Open Research Panel" decision, or click "Show Research Progress" option in country census event, to check your country's research progress.
Research points are generated from your province development, which you can see in Province Census. Province with higher literacy generates more research points per development, and different types of development generates different amount of research points.
1 Commerce generates 0.9 adm, 1.5 dip and 0.6 mil research points
1 Production generates 0.9adm, 0.9 dip and 1.2 mil
1 Agriculture generates 1.2adm, 0.6 dip and 1.2 mil
The numbers above are modified by literacy, cultural acceptance, etc. Province in territory only provides 20% of normal research points.
To increase research point, you should develop your province well, invest in education and be careful in making state.

You can revoke estate land like in vanilla, instead you should reduce estate influence and increase Absolutism so that estate land can be returned to government control.
What are the conditions to starting cultural assimilation other than what the manual says (so e.g. how much prestige do you need exactly)?
You have enough MP and settler growth/province has enough agriculture capacity to support new people/Province is in state or not overseas
