EDIT: Another map idea i like to call the Thunderdome, an island surrounded by a large dome, curved in such a way so that when players hit the dome at a fast enough speed on the right angle, they'll shoot straight down into the void
Your second idea is unfortunately impossible... Hammer really doesn't like complex structures. drpz_hellhole was supposed to be encased in a dome but it was such a pain in the ass i gave up. Even the name hellhole came from the frustration i felt trying to make it.
On the other hand, your first idea is pretty neat. I'll start working on it.

I wanted to make a map from a Smash game, but I never played any of them so I didn't know which one would be iconic enough to make. It will probably take a little longer to make than your usual map since I’ll have to use a lot of custom textures.

I actually already made it but for some reason it doesn't want to get uploaded to the workshop.

You could cheese it by having several small brushes that overlap and move into one position. Though it would have a glitchy looking texture.
You could do it by having like 100000 func_brushes each smaller then the other by 1 hm and make them dissapear one after another. But that's too much work for me, sorry! :/

Players would probably get stuck in them and the only way to get rid of it would be to allow doors to kill them... Thanks for the idea anyways, I might try to do it if I find some solution to players getting stuck.
Tried doing a map filled with water before, but I couldn't make it so water in the map and water in the skybox had a smooth transition. I'll try doing it sometime in the future when i gain more expierience with hammer. Thanks for the suggestion!
