No trader interaction menu
I have added two traders for testing. The survivor shows up with all the right attachments and is in the proper location but when I approach, there is no text to allow for interaction and I can't access any menus.

You need to make sure the<TraderMarkerPosition> for them is set to the same coordinates in the trader objects file, the ones that look like this

<TraderMarker> 0 // Trader ID

@John. That didn't work either. I'm going to have to just use the default file since I can't customize it at all.

Two things will cause that. One of your traders is missing a safe zone, or you put the trader indoors. If the safezone is missing from one trader, it can mess up a trader below it. The trader can sometimes be in a building but most of the time it doesn't work.
