The stormbreaker is supposed to stop thanos, NOT the infinity stone, besides he doesn't actually see the stormbreaker flyng at him and is hit without realising. The only things stronger than the infinity stones are the living tribunal, the beyoner and the one above all.

have you watched the movie thanos blasts it with all the infinity stones and it did nothing and stabbed him in the heart

Yes I have seen that and though I am sad to say this, it was just put in for the twists. In the comics and mostly regarded in the MCU, the infinity stones are way stronger than anything that could be made in the forge that made the stormbreaker.
