Are Gallimimus and the Long-necked dino just for show?
I know, I completely forgot it's name, but asides from having a health bar, the Galli and the long necked dino only seem to walk around. likewise, other NPCs don't seem to pay them any notice. Was this on purpose or a bug? because this heavily limits their uses

Yup they are. The T-rex and Carno should at least attack it or something.
