A bit late with my response because I'm always very well on time with everything.
Anyways, I've been suggested before to make extra workbenches and my stance on it is not to do it, due to the following issues:
1. It may solve the issue on the short term right now, for some of the weapon categories, but in the long term these sub-workbenches will just fill up the page as new weapons get added.
2. Adding more workbenches moves the issue of clutter from just the workbench menu to your base, as you have to build a bunch of benches in your base for each category.
Though I get that having it this way will make it easier to recognize types of weapons, so that you don't end up crafting say, an American-180, expecting a rifle, but instead getting an SMG, it doesn't really add up to the negative aspects. Besides that, while the weapons are currently ordered alphabetically, they're also ordered by type before this alphabetical order, going from Antimat-rifles, assaultrifles, battlerifles, etc. If you see the alphabetical order reset you can see you're dealing with a different category of weapon and each category has atleast one decently known weapon to recognize what type of guns reside in that category.
