The problem is that as the base game is old the tweaks to achieve stability may vary depending on your PC setup and some/most people never have stability issues (until they suddenly do).
Personally I "believe" that these improved stability for *me*, try googling "eaw random crashes" or similar for more tweaks (there are many you can try...) :
1) Starting the mod using the STEAMMOD=... launch option, this because the in-built FOC mod launcher is not very stable
2) Disabling steam overlay in steam settings
3) Setting win xp compativility mode by right-clicking the two exe files (foc/starwarsG) and checking that option for these files
4) In ground battles, be wary of enemy heroes as they sometimes may cause crashes (base game issues) - if you suspect this to happen use scouts to find them and nuke them from orbit before they can engage you
5) If you cannot fulfil a battle without a repeatable crash then autoresolve it
6) If the galactic map freezes i.e. acts like it is paused, look for the crossed swords battle icon on the map, reload a previous save, and rush that location/planet to prevent said AIvsAI battle that hangs to happen
7) Ensure you have no outdated submods running
8) Try verifying integrity of game files in steam just in case some file got corrupted
