EDIT: Veggie cakes do the same thing, starves faster than I can tame it. I even have taming at 3.5 rather than base, and my dino character food drain is at 1. It also won't eat honey. Running out of ideas x'D I didn't try the other veggies because I figured if carrots weren't able to tame them, then the other probably can't... but I'm desperate, so maybe I'll try the others as well.
EDIT 2: Also wanted to state that I noticed they don't start getting hungry until you start taming them, when they are just hopping around wild they are fine. It seems to be that once you give them any sort of taming food, they immediately start eating super fast. They poop way quicker like they are eating, and their food goes down, but giving them food while taming them isn't enough to keep their food up, then when their food level falls low enough the taming progress starts dropping and it's impossible to tame them. Also checked again and can't find any any special food recipes that the mod adds to tame them specifically, like the aura seeker kibble or the dragon feast stuff.
My overall guess is that this is an unintended bug, and that no one else has mentioned it because other people aren't very interested in taming rabbits when there are so many other neat creatures to tame LOL
