I can't figure out how to open the giant doors underground.

It's quite simple, you should keep in mind that you can only open one at a time, and you have to do it from one of two rooms on the level above, one of which you can access with a ramp from just past the hallway, and one which you access from inside the castle. The buttons are disguised as bricks poking out from the walls, and are next to slits facing the doors.
