Information
This addon simply adds 2 Chell NPCs under the category Portal 2.
One is hostile, the other is friendly.
This addon also adds a new playermodel, being an originally coloured Chell.
It includes c_arms and is hexed.

Well yeah but that's less common. We don't typically associate greying hairs with youth

Anyone can have greying hairs, i have some friends in their 20s with couple of grey hairs on top of their heads

I don't think there's any canon reason, I think it's just that the devs wanted her to look a little more youthful considering she's estimated to be in her mid-twenties.

Iirc, in Portal 1, she had a bit of greying hair. It doesn't really fit the concept of the game to have some older, more fragile protagonist pulling off these death-defying stunts
