If you had a normal amount of mods you can use the Loadscreen mod to see what mods are missing, if you had a ton this will be ugly to do
Only good sollution is sadly to make your Subscribed items a collection BEFORE you have the bug. (thats literally one click)
If you use Skyve (which you should if you have any mods), you could create a text file with all the Steam IDs in the workshop folder you still have, and then feed that list to Skyve to resub to all of them at once.
If you had a lot of subscriptions, creating such a text file can be done in a command prompt, if you know your ways around a computer a bit.
And indeed make that collection when you have it fixed, as Priest suggested above!
